This is a quick, yummy way to use those fresh heirloom tomatoes. Makes a simple, summer supper!
Ingredients: 4 large heirloom tomatoes (I like red and yellow brandywine, but you can use any heirloom)
3 cloves garlic, crushed
1/2 lb. uncooked pasta
1/2 tsp. kosher salt
freshly ground pepper
fresh grated cheese
Cut the tomatoes into small (3/4 inch) chunks, put in a large bowl. Add the crushed garlic, salt, and pepper, mix thoroughly. Cover, let stand. Meanwhile, cook and drain the pasta. Plate up the hot pasta, then immediately spoon the fresh tomato sauce over it. Top with the grated cheese and serve. Enjoy!
